Beef and Ginger Stir-Fry

For use with our Angus Beef

Beef and Ginger Stir-Fry

Slices of Angus beef cooked with garlic, ginger and shitake mushrooms make a quick and easy supper. This can be served with Chinese egg noodles or plain rice.

Serves 4
Preparation time: 10 minutes, cooking time: 6 minutes
Ingredients
500 g / 1 lb Beef fillet
2 tbsp sunflower oil
1 tbsp chopped root ginger
2 garlic cloves, chopped
1 bunch of spring onions (scallions), white and green parts, sliced diagonally
175 g / 6 oz shitake mushrooms, sliced
175 g / 6 oz sugar snap peas
1 tsp cornflour (cornstarch)
2 tbsp dry sherry
1 tbsp light soy sauce
1 tsp sesame oil
1 tbsp sesame seeds, toasted
To serve with the dish - Chinese egg noodles

Preparation

  1. Cut the beef into 5 mm / ¼ inch slices
  2. Heat the oil in a wok or frying-pan (skillet). Add the beef and stir-fry for 2 minutes
  3. Add the ginger, garlic, spring onions (scallions), mushrooms and sugar snap peas and stir fry for 2 minutes.
  4. Blend the cornflour (cornstarch) with the sherry and stir into the wok. Add the soy sauce and sesame oil and cook, stirring for 1 minute until thickened. Sprinkle over the sesame seeds and serve with Chinese egg noodles
  5. Enjoy

Tips and hints

Shitake Mushrooms

An oriental mushroom much used in Chinese and Japanese cooking. Shitake mushrooms have a slightly meaty flavour and can be bought both fresh and dried. Their powerful flavour will permeate more bland mushrooms, so they are excellent when used in conjunction with other mushrooms, such as button mushrooms. Cook them briefly, or they will quickly get tough

 

Sesame seeds

Sesame seeds are packed with vitamins, calcium, iron and protein, as well as having a delicious flavour - especially when toasted. Put them in a heavy based frying pan (skillet) and cook for 2 - 3 minutes until they turn brown and begin to pop. Cover the pan until the seeds don't jump out and shake constantly to prevent them burning.
