Boned and rolled shoulder |
Our lamb comes from three of our farms, and includes gourmet lamb / hogget / and mutton
from its rare breed sheep. The unploughed meadows support a large variety of
grasses that, in turn, give nutritional support to the sheep on each farm.
They mature naturally, then we take the animals to the abattoir ourselves to
minimise the stress level, hang them well and have them butchered expertly
by our top class butcher. The
benefit is in the taste.

Neck - Tasty meat for the casserole or a French trimmed
rack traditionally prepared to crown a celebration meal. - Our boned and
rolled joints are barded to ensure proper self basting when roasted.
